5 Whole30 Lunch Ideas

Whole30 lunches can be the easiest or the hardest — depending on the day and the leftovers. Usually, they're easy to piece together because I'll just heat up whatever leftovers we have in the fridge, but for Mark (who packs a lunch every day) they can be a bit difficult since there's not typically a microwave around when he's eating lunch. Here are a few no-heat, easy lunch options we've turned to quite a bit this summer.

Grilled Chicken Salads
I try to grill a bunch of chicken tenders at the beginning of each week to store in the fridge. It's always a good idea to have something prepped in case the week completely falls apart. I like to just chop a few pieces up and add them to a salad of mixed greens, tomatoes, cucumbers, and avocado and then top with a Whole30-approved dressing. Mark likes balsamic vinagrette, but I prefer Tessamae's honey mustard.

Trader Joe's Beef Sirloin Roast
Let's face it, Whole30 is not a very "convenient" way to eat. There are no fast food restaurants out there that cater to this type of diet (I wish!), but there's Trader Joe's and it comes pretty darn close. Their pre-cooked, pre-sliced beef sirloin has come to the rescue more times than not in the past week. You can eat it cold (great for lunches) or heat it up with some potatoes and veggies for dinner.

Chicken Salad 
Mark's go-to lunch is usually tuna salad, but when that fishy taste gets old we switch it up with some chicken salad. I usually buy the big bag of frozen chicken tenders and then toss all of them in the slow cooker for a few hours. Once they're cooked, I shred them and then mix together with Tessamae's mayo and relish. If you want to get really fancy, you can add some grapes and walnuts too!

It's almost ridiculous to explain this one because it is exactly what the title states. Chop 'em all up, mix them with a little basalmic dressing and voila!

Whole30 Sandwich
I've titled this the "Whole30 sandwich" since it's about as close as you can get without the bread and cheese. I'll wrap up some lettuce, tomato, mayo and bacon if you have it into an Applegate turkey slice. It's quick and easy and tastes like summer.
